We are a new brewery based in Leith. Our first beers are being contract brewed at Burnt Mill Brewery and The Kernel Brewery, however we are soon to be brewing our Pale ales and Lagers on our own kit.

At Pilot, we use fresh ideas and techniques but keep drinkability at the heart of everything we do. Putting flavour firmly ahead of appearance, we don't use finings or filtration in any of our beers. Established 2013, we brew and package all our beer in-house in genuinely small batches.
